Waterford Distillery is the latest project from Mark Reynier, the maverick who resurrected Islay’s Bruichladdich and turned into one of the most sought-after and pioneering whisky producers in the world. Based in a state-of-the-art facility originally built by Diageo for Guinness on the banks of the River Suir, in the southeast corner of Ireland, Waterford are creating some of the country’s most exciting malts. Inspired by his time in the wine industry, Reynier pays close attention to the provenance of the barley, working with 72 different Irish farms – some organic, some biodynamic and all shaped by their distinct microclimates and soils. This is very modern, terroir-driven Irish whisky (note the dropping of the ‘e’) and as such each bottle has a unique TÉIREOIR code (see what they’ve done there?), which can be entered on their website to uncover a wealth of information on the release, including photographs, maps and details on the harvest, grower, distillation and wood maturation.
The much-anticipated first releases from this exciting new operation have been a range of Single Farm Origin whiskies showcasing the very different flavours of barley grown around the country. The majority (including this one) have come from the 2015 harvest – an exceptional vintage for fine wine around the globe, but also for barley in Ireland apparently.
Hook Head Edition 1.1 was distilled in 2017 from Propino barley grown by Martin Foley on his farm not far from Waterford on Ireland’s south coast. Martin’s barley is lashed by the salty sea winds, making this one of the most coastal of Waterford’s whiskies. They’ve matured the Single Malt for three years and eight months in a combination of first-fill American oak, French oak and ex-Vin Doux Naturel fortified wine casks, before being bottled without colouring, chill-filtration or additives. Around 30,000 bottles were filled, of which very few made their way over the Irish Sea and the majority have sold out long ago. Expect sea influence and lots of spice; there’s salted caramel, salted popcorn, petrichor (or is it sea spray?), white pepper, freshly baked gingerbread, chilli chocolate, clove-studded pomander, lemon peel, hay, malted barley and hazelnut oil. As the inaugural release from Hook Head, this is already a collector’s item, but that coastal feel is something new from Waterford and is sure to prove incredibly appealing.
Waterford is the choice for true connoisseurs and this beautifully nuanced series is quite unlike anything else in the whisky world.
