Owned by the Goring family since 1743 Wiston Estate was converted into a 16 acres vineyard in 2006 following the vision of Pip Goring. The estate is now run according to a strict philosophy of sustainability with no herbicides sprayed on the soil. The outmost respect for nature and the work of award-winning winemaker Dermot Sugrue ensures no effort is spared in order to produce some of the best English Sparkling Wines available today. The fruit for their non-vintage range is sourced from the family’s vineyards located on the south facing chalk slopes of the South Downs in Sussex as well as partner vineyards also based in the same region.
The Brut NV is a classic blend of 34% Chardonnay 33% Pinot Noir and 33% Pinot Meunier. The wine represents perfectly the style of the house refreshing and elegant. The nose reminds of English orchard blooms Williams pears and green apples. On the palate it expresses a fine complex finish that combines purity of fruit lean minerality and mature characters from the long lees-ageing. A brilliant wine to pair with ceviche sashimi and goat cheese.
