Adelphi have released this single cask Caol Ila single malt, without chill-filtration and at natural cask strength, of only 531 bottles. Distilled in 2010, it has been matured for 12 years before being bottled in 2023.
The unique bottling presents salty, smoky maritime aromas which unfurl leading to notes of smoked cheese, roasted gammon and cloves. Lashings of dulce de leche, cured meat, prunes, walnuts and hazelnuts delight the palate leading to a wonderfully long finish.
Caol Ila – pronounced ‘cull-eela’ – means “Sound of Islay” and refers to the position of the distillery near Port Askaig overlooking the water that separates the island from neighbouring Jura. Founded in 1846, the distillery has had a tumultuous history. But it has thoroughly earned its fame, not just for its high-quality Single Malts but for its importance in blends such as Johnnie Walker Black Bottle and our beloved Compass Box.
