This Blanc de Blancs is produced in limited quantities and aged for six years in the house cellars and delivers enticing aromas of zesty citrus, jasmine, acacia honey and Timut pepper combined with passion fruit, spices and Mirabelle plum tart alongside hints of grapefruit, blood orange and a delicate salinity.
The pure and fresh characteristics alongside the smooth, silky texture reveal the signature Ayala style; the perfect accompaniment to a variety of dishes such as Turbot, goats' cheese or creamy fruit Pavlova, as well as being a remarkable apéritif.
With a history dating back to 1860, Ayala is one of the original twenty-six Grandes Marques and was one of the key pioneers of dry modern style. The great house in Ay was given to Edmond de Ayala as a wedding present and remains the beating heart of this great Champagne. Although still a family-run business, Ayala is now owned by Bollinger, leading many to consider this as Bollinger’s lesser-known, and therefore slightly more exclusive, little sister.
