This Brut Nature is perfect for those who like their Champagne bone dry as no sweetening dosage is added. Aged in Ayala’s cellar for almost four years before release which helps to mellow what can sometimes be quite a searing style into something a little softer with gorgeous toasty notes. This is our favourite Champagne for pairing with oysters sushi and sashimi but it works equally well with canapés in the sunshine or Vietnamese and Thai cuisine.
With a history dating back to 1860 Ayala is one of the original twenty-six Grandes Marques and was one of the key pioneers of the dry modern style. The great house in Aÿ was given to Edmond de Ayala as a wedding present and remains the beating heart of this great Champagne.
