This small but impressive farm distillery is owned and operated by the Cuthbert family, producing whiskies in the quieter periods and only in small cask numbers. When not distilling, Francis Cuthbert looks after the estate, growing the malting barley used to make this Lowland Whisky. With a strong emphasis on locality, renewables and sustainability, there isn’t much that goes to waste. A nearby brewer provides Daftmill with its spent brewer's yeast, used grains from the mash are fed to the farm’s cattle and distillation leftovers are spread on the fields as fertiliser. Water is sourced from the estates own spring and aside from Scottish made copper stills, most other things are produced or sourced within 5 miles of the farm – this really is an incredibly resourceful and self-sufficient distillery. 

The barley variety Publican was grown in the 43-acre field and was harvested on the 28th and 29th August 2009. It was then dried and stored on the farm to be malted in Alloa during the summer of 2010. The whisky that went into this bottling came from twenty-five first fill ex bourbon barrels, which were filled in November and December 2010. Then stored in their dunnage warehouse until bottling in 2023.

This release is classic Daftmill with the distillery’s character displayed front and centre. Expect notes of freshly mown grass, green herbs, crushed nettles and plenty of typical yellow and green fruits, alongside some flowers and their pollens.

On the palate there’s a good balance of sweetness with fruits, citrus curds and custard, along with slightly drier tones of fruit teas, chamomile and linseed oil. It boasts a very easy and sippable profile that’s medium in length, with a balance of sweetness and dryness and elegant floral notes.
