Every November, The Dalmore whisky makers visit the distillery’s historic sandstone warehouses to explore the ageing casks. In the chill shadows, the casks are meticulously assessed and only a handful with distinguishing attributes are hand-selected from any one year. The mature spirit from these casks is then masterfully married to create one harmonious expression – a rare whisky revealing the soul of a single year at The Dalmore. Carefully crafted, finely balanced, and bringing together the very finest casks from one year, each limited release single malt will then take its rightful place in The Vintage Collection.
For the 2008 release, the whisky has been matured in American white-oak ex-Bourbon casks and enhanced by hand-selected Matusalem Sherry and Pedro Ximenex Sherry Casks. Expect aromas of milk chocolate, caramel and cracked black pepper initially, all with a delicate mandarin note. On the palate, an indulgent combination of manuka honey, cacao nibs, poached apples and sultanas all finished off with creme brulee, chocolate brioche and a hint of cinnamon.
