Aleph is named after the first letter of the Phoenician alphabet, which means ‘ox’. That’s why the label depicts the butchers parading their oxen, and it might give you a hint at what you should pair this red with. The wine itself is a Côtes-du-Rhône Villages from the woody Massif d’Uchaux in the southern half of the Rhône valley, where the Massive Central and the Alps meet. It was crafted using Syrah and Grenache grapes that were picked by hand from old bush vines. Matured in a combination of stainless steel (to maintain the freshness and purity of the fruit) and older oak barrels (to soften the structure without adding too much woodiness), it bursts from the glass with blackberry, blackcurrant, Chambord, black olive, liquorice, forest floor and sage. Serve this up alongside steak, roast beef, slow-cooked stews and comfort food.
