The Pinot Noir and Chardonnay grapes for this gorgeous Champagne are strictly selected from the finest vineyards Devaux have access to. It was matured on the lees for more than 60 months. Here it’s worth noting that the legal minimum is just 15 months which tells you that this is a house that goes well above and beyond the call of duty. The cuvée was crafted traditionally using an addition of 11% still Pinot Noir wine to impart that fabulous colour. Those winemaking efforts are what led Éric Lebel the former Chef de Cave and Deputy Director at Krug to once refer to Devaux as “the Krug of the Côte des Bar.” And that demonstrates just what high esteem this house is held in.
