Sténopé means ‘pinhole camera’ in French and this thrilling wine is a snapshot of a unique year captured by two of the world’s most exciting winemakers. Michel Parisot and the Rhône legend Michel Chapoutier come together to immortalise the 2011 season. It was an erratic year when very few houses declared a vintage so this is a real rarity.

Sténopé 2011 is crafted using the lightly pressed juice of Chardonnay and Pinot Noir picked from 50-year-old vines on the best sites in the Côte des Bar. This juice was fermented in 300-litre oak barrels made of locally sourced wood from the three forests in the Champagne region. Following the second fermentation each bottle was aged for at least seven years on the lees (more than twice what is legally required) followed by a further year in their cellars after disgorgement. Those winemaking efforts are what led Éric Lebel the former Chef de Cave and Deputy Director at Krug to once refer to Devaux as “the Krug of the Côte des Bar.” And that demonstrates just what high esteem this house is held in.

Only 6 387 numbered bottles were produced and it positively buzzes with electricity finesse lemon sorbet elderflower crunchy peach dried apricot fresh pear pineapple cubes sugared almonds praline toasted brioche and a pinch of smoked sea salt. Sténopé 2011 is proof that in challenging years great winemakers can still create great wines. Devaux founded by brothers Jules and August Devaux and now owned by the Union Auboise cooperative is a specialist in Pinot Noir. Located nearer to Chablis than Reims or Épernay their grapes are grown on Kimmeridgian marl and Portlandian limestone making them quite unique.
