Constance is a big unoaked red that’s screaming out for cassoulet wild mushrooms herby stews game and sausages. An earthy blend of highly concentrated Tannat Cabernet Sauvignon and the local variety Fer Servadou that have been picked from gnarled old vines; it’s as deep and dark as an abyss. Blackcurrants blackberries black tea leaves black pepper prunes figs liquorice dark chocolate flecked with mint heavily roasted coffee and so much more; we cannot get enough of it.
Madiran a sleepy commune in the foothills of the Pyrenees famed for being the land of the Musketeers has a long history of winemaking. In fact it’s home to some of the oldest vineyards in France. Originally made by monks the rustic Gascon red wine was carried and enjoyed by French pilgrims who were distrustful of Spanish wines on their way to Santiago de Compostela. The major grape variety is Tannat which is known for producing big dark tannic and monstrous wines. But more recently this beast has been tamed by winemakers such as superstar Alain Brumont at Châteaux Montus and Bouscassé and our favourite Didier Barré at Domaine Berthoumieu. Although the area is changing a little it has remained relatively impervious to fickle fashion and the rise of technology which means that what the wines are wonderfully wild.
Domaine Berthoumieu was founded in the 1850s and the Barré family took over in the 1990s. Under their watchful eyes this 25-hectare estate in the village of Viella has become a reference point for the region.
