Domain Fernand & Laurent Pillot brings us this 2021 vintage Volnay, crafted from four small plots; Brouillards, Ronceret, Grand Champs and Petit Brouillards, two of which are Premier Crus, with some containing Pinot Noir vines more than 50 years old. It is aged for 15 months in French oak barrels, with a third of those barrels being new oak, creating a refined Pinot Noir of Volnay which is full bodied and delicately complex.
The vibrant ruby red wine bursts with aromas of raspberry, cherry and redcurrants, interwoven with subtle floral notes and hints of earthiness. These bright red fruit flavours evolve elegantly alongside nuances of violet, rose petals and a touch of spice. Silky tannins provide structure and balance, while the vibrant acidity lends freshness and energy to the wine. This opulent and juicy Volnay can stand up to big meat and game dishes such as duck a l’orange or Peking duck as well as roast beef and strong cheeses. Drink now or leave to age in the cellar for a few years letting the complexity evolve.
