Especially when we’re talking about Jean-Marc Boillot. This domaine holds some of the finest terroirs in Puligny-Montrachet, such as this Premier Cru located at the top of Blagny hill. Intense aromas of jasmine, tropical fruit, beach pebbles and toast oak gently waft from the glass. In the mouth, it has the perfectly balance of rich roundness and fresh acidity, followed by a chalky mineral note on the finish. It makes a wonderful match to unagi, dressed crab, langoustines, poached salmon with potato salad, pasta with pangrattato, buttery Dover sole, or parsley and oil sauces like chimichurri and gremolata.

Based in Pommard, Domaine Jean-Marc Boillot owns parcels in Beaune, Pommard, Volnay, Meursault, Chassagne-Montrachet and Puligny-Montrachet, where this wine comes from.
