Handcrafted by Master Distiller and all-round hero Richard Seale using rums that have matured for at least 12 years in American oak barrels. It offers phenomenal value for money especially considering that a 12-year-old spirit matured in a tropical climate displays an equivalent development that might take 30-36 years in Europe. Bottled with no colouring or added sugar this is top-of-the-line Bajan rum. Nuttier than the XO it has a pinenut waxiness accompanied by chewy caramel flambéed tropical fruit rolling tobacco crème brûlée toffee apples bourbon biscuits in the pocket of a leather jacket dark chocolate Bounty bars and a light dusting of bonfire ash. Sip this neat and take your time over it.
Founded in 1908 Martin Doorly’s distillery evolved into Doorly’s Macaw and then became the first rum to be exported from Barbados. It’s now made at the highly respected Foursquare Distillery described quite rightly by The Telegraph newspaper as “the world’s best rum distillery”. However as a nod to its middle incarnation each bottle of Doorly’s features a rare macaw. The 12 Year Old is emblazoned with the critically endangered Spix’s Macaw – who some may recognise from the animated film Rio. This gorgeous bird is now thought to be extinct in the wild and gives you an idea of just how rare this rum is considered to be.
