Awarded 92 points by the experts at Decanter Magazine this sweet wine from Greywacke (pronounced ‘grey-wacky’) is deeply honeyed and seriously impressive.
Imagine apricots drizzled with honey elderflower cordial marmalade and orange water baked in the oven and garnished with crumbled honeycomb. This will be served on a dessert platter alongside crème brûlée tarte tatin quince jelly and cup of lightly smoked tea. That’s exactly what Greywacke’s Botrytis Pinot Gris 2015 tastes like. Serve alongside dessert – you might find inspiration within the tasting note above – or maybe a cheeseboard or pâté and toast.
Fermentation for this wine took place in old oak barrels 60% of which were allowed to spontaneously wild-ferment which adds even more richness and depth to the shrivelled raisin-like botrytis grapes. As if that wasn’t enough it was then left to age on the lees for nine months imparting a wonderful creaminess. This is not just a sweet wine it’s a labour of love. But what more would you expect from the man who put New Zealand Sauvignon Blanc on the map and who made Cloudy Bay a household name throughout the world.
