Traditionally Balsamic Vinegar is made from the Trebbiano grape and is produced in and around the town of Modena in Northern Italy. The grape must is cooked and filtered and then aged in a "Battery" of barrels made of chestnut cherry ash mulberry juniper and oak. Over the years the wood imparts it's flavour to the vinegar and the older the vinegar the more intense the flavours become. This 15 year old style from Harvey Nichols will be naturally thick aromatic and intense in flavour
