Made with only the reddest, ripest cherries, this small-batch, single-origin coffee is a rare pleasure and truly one to savour. With an intriguingly delicate and complex cup profile, the flavours of jasmine, clementine and candyfloss slowly unfurl, for a silky-smooth mouthfeel that’s sure to delight even the most discerning coffee connoisseur.
This variety originated in the Gori Gesha Forest of Ethiopia and is currently the hottest property in speciality coffee, renowned for its sweet and floral complexity. Our Honduran Gesha coffee beans were grown on the Casona plot in the Comayagua region by the Mierisch family, who have over 100 years of experience and won the Cup of Excellence Honduras in 2019 and 2021.
Beneath the outer skin, pulp, pectin, parchment and silverskin, the coffee cherry contains two seeds. To get to those seeds (or beans), the coffee must be processed. There are several ways of doing this. These beans were washed (a.k.a. wet process). This means that the fruit layers were removed using water, and the beans were then dried in 50% shaded green house for 16 days. Other processing techniques can dramatically change the flavour. However, the washed process creates the cleanest style of coffee and is therefore the best way to showcase the delicacy of Gesha beans. Think of it like wine made in oak versus wine made in stainless steel; the latter means you are just tasting just the variety and the terroir, not the processing method. So, expect a brew with incredible clarity and vibrancy.
Brew ratios:
- For espresso: 1:2 coffee to water extracted in 28-32 seconds.
- For filter: 60-65g coffee to 1 litre of water.
