Made with only the reddest, ripest, hand-picked cherries, this honey processed, small-batch, single-origin coffee represents the very best of the highly prized Panamanian Gesha variety. Elegantly floral, aromatic and complex, with fruity flavour notes of blackberry, apricot and cane sugar, its smooth and delicate mouthfeel is sure to delight even the most discerning coffee connoisseur.

This variety originated in the Gori Gesha Forest of Ethiopia and is currently the hottest property in speciality coffee, renowned for its sweet and floral complexity. Our Panamanian Gesha coffee beans were grown on a plot in Río Sereno in the Chiriquí highlands by the Caballero family. Enoc Caballero is a third-generation farmer, his wife Yaneth manages the finances, their daughter Libney takes care of admin while studying dentistry in Panama City, and their son Abner helps with marketing when he’s not in school. This resilient family lost a lot of their coffee plants to rust – a disease that defoliates them. But this allowed the Caballeros to start again, adopting a more productive Brazilian-style farming in tighter rows, experimenting with new varieties like Gesha, and growing companion crops like tomatoes and courgettes alongside the coffee.

Beneath the outer skin, pulp, pectin, parchment and silverskin, the coffee cherry contains two seeds. To get to those seeds (or beans), the coffee must be processed. There are several ways of doing this. These beans underwent the honey process. Between the skin of the coffee cherry and the bean is a sticky and sugary substance called mucilage, but often referred to as honey. Vegans needn’t be concerned though because it isn’t honey at all. These beans have been dried in the sun with the skins removed but the honey left intact – a more sustainable approach that uses less water than washing. During the process a little fermentation takes place as the honey dries, creating a pleasing acidity, a fruity sweetness and more body and complexity.

Brew ratios: 

  • For espresso: 1:2 coffee to water extracted in 28-32 seconds.
  • For filter: 60-65g coffee to 1 litre of water.
