Grown at altitude this recently rediscovered low-yielding Harvey Nichols Pecorino has been rescued from extinction by a dedicated group of local winemakers. Made exclusively from fruit grown on organic vineyards at the charmingly named Cìu Cìu estate the grapes are hand-harvested and naturally fermented in medium-sized oak barrels with an additional six months resting on the lees to impart rich complexity and texture.
This stunning white exhibits delicate aromas of jasmine and lemon blossom with flavours suggestive of ripe peach apricot and a hint of spice on the finish. And unlike its cheesy namesake this Pecorino is completely vegan friendly.
