Naruto Tai is an immense powerhouse of a sake as its hefty 18.5% ABV cool aluminium can and nickname “Drunken Red Snapper” suggest. Not for the fainthearted we recommend this full-on sake for adventurous fans of funky natural wine and neat spirits.

Bone dry with a sweet aroma Naruto Tai is round oily savoury and tingly. Expect a super-fun mix of Brazil nut hazelnut yoghurt walnut oil caramelised macadamia chestnut mushroom roasted peach pear skin melon toasted rye bread cacao nibs white grape and a spicy kick of alcohol. We recommend serving this vegan-friendly sake alongside big food think sharing platters wintry comfort food and steaming bowls of ramen. Alternatively sip it neat from a whisky glass. It’s also one of the few sakes we find enjoyable alongside a cigar.

Most sake is pasteurised and diluted during brewing. But Naruto Tai is “nama genshu” sake an untamed punchy and rich style that undergoes neither of those processes. As this kind of sake is highly sensitive to sunlight heat and air it’s usually only available to buy as a special treat at the brewery. But now it’s available in this can-bottle hybrid which protects it perfectly and can be stored at an ambient temperature. 

In 1804 Naozo Matsuura founded the Honke Matsuura Brewery in the city of Naruto in Tokushima prefecture. This area in the east of Shikoku Island is the traditional starting point for a pilgrimage that takes in 88 Buddhist temples over 745 miles. That kind of devotion is also applied to the sake making process. The rice is polished down so that 42% of each grain is removed and after the milling the grains are picked through to remove any imperfect pieces. And that’s why it has become the sake geek’s choice.
