Sauvignon Blanc, but not as we know it.
This is a dry Sauvignon Blanc from high on the Helderberg mountain in Stellenbosch. The farmer of the vineyard makes a sweet wine from it, but he has a problem. The baboons love his sweet grapes and tend to ravage the vineyard in search of them. So, the farmer gives the top portion of the vineyard to BLANKBottle’s Pieter H. Walser, and he picks it early in the season. The disappearance of the grapes at the top of the vineyard fools the baboons and they leave the grapes further down alone. Sadly, in 2019, the baboons got wise to this and began venturing further down the mountain again. As a result, the 2019 is probably the last vintage of this wine. And with only 900 bottles made, it’s going to disappear forever soon.
Rabbitsfoot is a barrel-fermented and barrel-aged Sauvignon Blanc, making it something a little different. Plump, aromatic and grassy, with notes of mango, peach, quince, papaya, lime, lemon, honeysuckle and spices, this is truly exceptional. Proof that the bunny appendages are very lucky indeed.
Pieter Hauptfleisch Walser is probably one of the coolest guys on the planet. He’s a man who doesn’t know how to label himself. Winemaker, IT guy, marketer, négociant, surf dude, punk, artist, polymath… he’s all these things and more. He’s complicated, much like his wines, which also don’t give much away by their labels. His story began with a customer who came to see him and said she wanted to buy anything but Shiraz, because she wasn’t a fan of that particular grape. He listened to what kinds of things she preferred and ended up serving her a Shiraz that he hadn’t labelled yet. She loved it and went away with three cases. From there on, Peter decided not to provide too much information on his labels, so that the wine will be judged on just the quality and the way it tastes. He sometimes makes 30 different wines a year, half of which are one-offs never to be repeated. He travels all over the Western Cape uncovering an eclectic array of grapes and wines, he’s even made a blended wine by hooking himself up to an electroencephalogram (EEG) machine and measuring his emotional response to the taste of the components. His honest and experimental approach to winemaking has garnered him a cult following and listings everywhere from Chiltern Firehouse to Nobu, and of course at the OXO Tower.
