Following the arrival of phylloxera in the 20th century, all of the vine in Champagne had to be destroyed and replanted using American, disease-resistant, rootstock. Only two parcels survived in the region: Chaudes Terres and Clos St Jacques, Bollinger’s grand crus plots in Aÿ planted with Pinot Noir. To this day, these two plots are grown the traditional “en foule” system, planted at an incredibly high density. All fruit is handpicked and only 3,300 numbered bottles of the 2006 vintage were produced.
The 2006 release represents a rare and highly collectable acquisition for any Champagne collection. Complex and open on the nose, Vielles Vignes Françaises displays enticing aromas of apple pie, cinnamon, honey, dried mango and toast with a myriad of savoury, developing undertones. The palate displays great concentration and depth with a rounded, velvety, mouth-filling quality that reveals layer upon layer of complex flavour.
