In 2012 Sauternes producer extraordinaire Château Coutet launched their first ever dry white called Opalie. Mouton-Rothschild’s Managing Director Philippe Dhalluin helped them to pick out the perfect vineyards in the heart of the Premier Grand Cru of Barsac. As you would expect, the results have since proved mind-blowing.
The exceptionally rare 2011 is the second vintage and – displaying the intensity of a Sauternes, the dry elegance of an oaky Burgundy and the opulence of a Southern Rhône white – it’s truly impressive stuff. Tropical fruit, tangerine, Granny Smith apple and Conference pear combine with lemon curd, pecan pie, spiced butter, brioche, honeyed almonds and vanilla pod. This crisply refreshing 50% Sauvignon Blanc and 50% Semillon blend is aged for nine months in oak and is a wonderful wine to carry over from a rich and creamy main course to cheese and on to dessert.
