Espadín Madrecuishe Mezcal

This artisanal Mezcal was crafted from a blend of Espadín and wild Madrecuishe harvested at around 8 to 13 years old. Those agave hearts (or piña) are cooked in a conical stone oven beneath the ground and then crushed using a donkey-drawn tahona stone. The juice is fermented in wooden vats and double distilled in a copper pot. This process imparts a smoky and complex flavour. Sipping it, we discovered an earthy smoke reminiscent of peated Islay Scotch, notes of clay and terracotta, roasted agave, dried herbs, lemon, mint tea, creamy milk chocolate and that combination of tobacco, moisture and wood you find in a cigar humidor. It has a chameleon-like quality when paired with food. Try it with chipotle-spiced dishes and it draws out the smoke and chilli heat, whereas fruity salsas seem to pull out more tropical fruits, the nixtamalised corn of homemade tacos intensifies the earthiness, and fresh herbs make it seem greener in character.
Mexican cuisine is one of the greatest on Earth, as proven by UNESCO placing it on the list of Intangible Cultural Heritage of Humanity in 2010. Convite Espadín Madrecuishe Mezcal is a gastronomic spirit befitting of such a rich food culture.
