Pineapple Crisps 47g
These crispy pineapple slices are unbelievably versatile. They add glamour to a cheeseboard and pair beautifully with Gruyère. We sometimes use them to garnish a Daiquiri or Margarita, or to add crunch to tacos al pastor. You can even build little canapés on them, piling them up with ceviche, anchovy and chilli (trust us, it’s deconstructed Vietnamese mam nem dipping sauce) or guacamole. They are also wonderful to snack on straight from the bag, safe in the knowledge that there’s only 25-40 calories per portion.
Annie Babayan began capturing the Californian sunshine by finely slicing ripe fruits grown in her garden and dehydrating them at the kitchen table. Dardiman’s California Fruit Crisps may have scaled up a little since then, but Annie doesn’t do anything differently.
