When Dingle Distillery started producing whiskey in 2012 it was the first in a long time not to be produced by Cooley, Bushmills or Midleton. It paved the way for new wave of independent Irish distilling. Their idea was that rather than putting harsh fiery spirit into barrels to mellow it as most whiskey producers do, they wanted to fill their casks with a smooth and mellow base instead. The response to their first two releases of this revolutionary idea has been phenomenal. Six years later we have Dingle Single Malt Batch No. 3, a triple distilled marriage of Bourbon and Port casks. Only 13,000 bottles were produced and it’s highly complex stuff, displaying blackcurrant jam on brioche, dried tropical fruit, golden syrup, pepper, salted caramel truffles, tart redcurrants and lots of tea – chamomile, Assam, matcha and spiced chai.
The artisan Dingle Distillery in County Kerry isn’t looking to forge a megabrand, mass produce, create spirits for others or take over the world. What they’d like to do is revive the tradition of boutique independent distilling in Ireland and promote the betterment of their colourful home. Established by the founders of the Porterhouse Brewing Company, who have been pioneering craft beer since 1996, their new venture is the talk of the town and soon the whole world will notice.
