With scores and glowing reviews like that, this is sure to become a legendary Champagne. This release of Dom Pérignon Plénitude P2 comes from 2002. It was a benchmark year; critic Jancis Robinson describes it as “a magnificent vintage for Champagne” and expert Richard Juhlin says “this is a beautiful and generous vintage with a bright future in store”. It has spent an additional eight years ageing on the lees beyond what the house did for the ‘standard’ Dom Pérignon 2002. Immensely rich, explosively energetic and remarkably youthful, Dom Pérignon Plénitude P2 delivers a banquet of buttery pastry, lemon zest, sea salt, grilled peach, Earl Grey tea, wildflowers, tropical fruit, toasted brioche drizzled with honey, and a combination of smoke and medicinal mint that calls to mind something of Islay whisky. You’d be forgiven for thinking that the ‘P’ stood for perfection or phenomenal.
According to Dom Pérignon, Champagne doesn’t develop on the lees (the dead yeast trapped within bottle that gives the creamy and nutty flavours) in a linear fashion. Their Chef de Cave (Vincent Chaperon following in the footsteps of Richard Geoffroy) believes that the wine goes through three peaks in its lifecycle, called plénitudes. At these magical moments, it hits new heights in terms of its energy and autolytic character. As a result, in exceptional vintages Dom Pérignon can create two or three very different expressions of the same year. The first plénitude or peak comes around eight years from the harvest and this is released as the ‘standard’ Dom Pérignon. The second, which used to be known as Oenothèque but is now called P2, comes at around 15 years. And finally, P3 arrives around 30 years after the harvest.
Named after the 17th Century Benedictine monk credited as the person who “invented” Champagne, Dom Pérignon is one of the world’s most coveted maisons. Representing a blend composed of Chardonnay and Pinot Noir, only the very best grapes are used to create Dom Pérignon, with the production process employed being both lengthy and meticulous in its attention to detail. This is another truly delicious Dom Pérignon release, Plénitude P2 would make a wonderful gift for any Champagne enthusiast or a memorable way to celebrate any special occasion.
