But obviously it’s not just those ‘dos hombres’ behind it. There’s also the very talented third-generation Mezcalero Velasco who makes it in the village of San Luis del Rio in Oaxaca; his team that lovingly help him harvest the Espadín agave hearts, roast them in a pit for four days, crush them with a tahona stone and ferment them outside in wooden barrels over several days; not to mention hundreds and hundreds of years and countless generations of Mexican tradition and heritage.
