Grapes have been grown in the steep canyons of Ribeira Sacra for two thousand years. Loved by the New York Times, they enjoy a cult following across the pond but are exceedingly rare over here. This one’s made by four friends using organic grapes from 60-year-old Mencia vines and a mixture of unknown varieties. Velvety, juicy and brimming with raspberry, strawberry, liquorice, wild herbs and parma violets, we love it with pastrami, peppery lentils or mushroom tagliatelle with a creamy peppercorn sauce.
Roberto, Alfonso, Laura and José met while studying winemaking at university in Alicante. On graduation, they created Envínate, a project to make honest, traditional and exciting wines in some of Spain’s lesser-known regions. All their wines are hand-picked, foot-trodden, fermented with wild yeasts, aged in old barrels and are made using very little sulphur.
