Although famous for their gin, which is the only one ever to have won two Double Gold Medals at the San Francisco World Spirit Awards, The Forest Distillery has recently branched (geddit?) out into whisky. Their first production has been filled into barrels, but won’t be ready for release until 2021. So in the meantime, they’re using whisky from other distilleries and experimenting with casks to perfect their style.

Forest Whisky Cask 1 is their very first whisky release. Only around 200 bottles will hit the market and 30% of those have already been ring-fenced for export. Although the origin of the liquid is being kept secret, what we can tell you is that they’ve taken a very interesting blend of malts, all of which are 8 years old or older, and have finished them in a 50-year-old Oloroso cask. When you pull the cork from the stunning black and gold porcelain bottle (made by Wade Ceramics and designed by Georgia Law), you’ll discover a really complex dram. There are lots of chocolate bars – we found Ritter Sport Marzipan, Mars, Cadbury’s Fudge and Caramac – and lots of puddings; think banana split, lemon meringue pie, crème caramel, chocolate cornflake cakes, sticky toffee pudding and French apricot tarts. But it’s not just sweetness, there’s toasted barley, granola, pepper, egg nog and baking spices, plus something wonderfully earthy that brings to mind slate, rosemary, petrichor, dusty log cabins and visiting Belgian breweries. It’s a fascinating whisky.

The Forest Distillery is a small family business based in a 17th Century stone barn deep in the woods of the Peak District National Park, somewhere between Macclesfield and Buxton. What began as a hobby on the kitchen table has now garnered critical acclaim worldwide. As only the 15th distiller in England to be granted a licence to distil, mature, blend and bottle whisky and having built a phenomenal reputation for their gin, there will be a huge demand for every single release that Lindsay and Karl Bond produce.
