Doorly's XO Rum
As the label says: “There are rums for those who know and then there is Doorly’s XO… for those who know better.” Now you know better…
Handcrafted by Master Distiller and all-round hero Richard Seale using rums that are at least six years old, Doorly’s XO undergoes a second maturation in Oloroso Sherry casks. Bottled with no colouring or added sugar, it's a top-shelf rum in all but the price. Savoury yet herbal, you’ll uncover treacle, aniseed, liquorice, menthol, polished floorboards, warehouses, toasted nuts, currants, freshly roasted coffee, chocolate-covered marshmallows, Christmas stollen, vanilla toffee and Demerara sugar. A Bajan delight to sip neat, but also great with ginger ale and a splash of Angostura bitters, or mixed into a Zombie or Mai Tai.
Martin Doorly’s distillery evolved into Doorly’s Macaw and then became the first rum to be exported from Barbados. It’s now made at the highly respected Foursquare Distillery, described quite rightly by The Telegraph newspaper as “the world’s best rum distillery”. However, as a nod to its middle incarnation, each bottle of Doorly’s features a rare macaw. The XO is emblazoned with the endangered but majestic Hyacinth Macaw, the largest flying parrot.
