The connoisseur’s green tea – delicate, floral and very refreshing. Prized for its complexity, Mao Feng comes from the humid Yellow Mountains in China. As the romantic legend goes, a young maiden’s lover was killed by an evil plantation owner who wanted her for himself. Escaping the night before her wedding, she wept a flood of tears over the grave of her beloved, so much so that she transformed herself into the mist and rain that perpetually hangs around the plantations. And from the grave sprouted a tea bush.
The name means ‘fur peak’, referring to the silvery down on the finest tips of the bushes used to make this famous tea. Let the bag sit in not quite boiling water for at least three minutes so the full beauty of their flavour is released. You’ll discover a brew that’s reminiscent of a summer breeze, morning dew on grass, apricots, orchids and pistachios. Mao Feng is particularly good for those who find some green tea too astringent, and its subtlety pairs wonderfully with afternoon tea, desserts, breakfast, crepes and fresh fruit.
