On the palate the wine is vibrant, medium-full and zesty, with beautiful structural tension, great mineral drive and grip, gorgeous fruit tones and a very long, perfectly balanced and complex finish. If we had to sip just one wine until the end of time, we think that maybe it would be this Bernkasteler Badstube Spätlese. It comes from a vineyard tucked behind the old town of Bernkastel-Kues on the Mosel. It was named after the public baths once located in the area. And we'd happily bathe in it! The vineyard borders the more famous Graacher Himmelreich, but for some reason it remains a little more under the radar. The wines produced on it tend to be a little more delicate than those from Graacher and Wehlener, but this makes them gorgeously racy. Mouth-watering acidity, summery sweetness, that lunchtime-friendly 7.5% ABV, and a wealth of wildflowers and blossom. That floral finesse is accompanied by notes of zingy citrus, crunchy green apple, pebble beaches, star anise, herbs, tangerine, peppermint, smoked sea salt and creamy marzipan. As the experts at Mosel Fine Wines note, “This is a delightful Spätlese in the making, which already proves very enjoyable now, but will only reveal all its colours after a couple of years.” So, consider tucking a couple of bottles away in the cellar, and then breaking them out for coconut-based curries, Thai and Vietnamese cuisine, Baja tacos, al fresco lunches, salads with tropical fruits, gravadlax, appley dishes or meats like duck and goose.

Founded in 1911, Joh. Jos. Prüm (also known simply as JJ Prüm) is arguably one of the most iconic German producers. The estate stretches for 33.5 hectares alongside the Mosel Valley and the family have been cultivating vines along the banks of the Mosel since the 17th Century. Renowned for the pure and exceptionally long-lived expression of Riesling they create from the most prestigious vineyards and predominantly ungrafted vines, the estate is now managed by Dr. Manfred Prüm and his daughter Dr. Katharina Prüm.
