A sparkling wine like no other. Peller Estates’ Ice Cuvée Classic is made following the traditional Champagne method but what makes it completely unique is that while most Champagne receives a balancing dosage of what is called the liqueur d’expédition (a mixture of sugar and wine) before the cork goes in Ice Cuvée receives an icewine dosage. And not just any icewine Peller’s Vidal Icewine which is one of the most coveted sweet wines on the planet.

Crafted using Chardonnay and Pinot Noir grown on the Niagara Peninsula and of course that hit of Vidal Icewine this Canadian sparkling wine is ripe and yeasty with notes of apricot jam on freshly baked bread honey ripe apple tropical fruit and the freshness of grapefruit sorbet. Certainly not a Demi-Sec but it has an off-dry touch of crowd-pleasing sweetness which makes it perfect for sipping on its own or pairing with salty nibbles creamy cheeses and Asian dishes particularly sushi creamy curries and fresh Vietnamese salads. In 1927 Andrew Peller travelled from Hungary – home to some of the world’s finest dessert wines – to Nova Scotia in Canada with just five dollars to his name. Exploring the entire country he planted his first vineyards in British Columbia’s Okanagan Valley. This entrepreneurial young man then opened wineries in British Columbia Ontario and Nova Scotia and began to expand his empire. His descendants have been making wine ever since. They founded Peller Estates in his honour in 1969. Based in Ontario this multi-award-winning family-run Canadian winery has become legendary particularly for its exceptional dessert wines.
