Daiginjo Sake 720ml
The rather unassuming looking Nabeshima Daiginjo is one of the most incredible sakes ever to grace our shelves. If compared to wine, this easily ranks alongside the First Growths of Bordeaux. To create this stunning sake, the highly prized Yamadanishiki rice grains have been polished to a ratio of 35%, meaning that 65% of the grain is gently and painstakingly milled away. This is a labour of love and makes this one of the most highly polished sakes we’ve ever stocked. The velvety mouthfeel is breathtakingly beautiful, calling to mind Grand Cru Burgundy. Melon, peach, peardrop, candied pineapple, roasted chestnuts, yeasty Champagne and wild mushroom are seasoned to perfection with black pepper and a pinch of sea salt. Often sake is pasteurised twice, but this is pasteurised just the once, leaving a very gentle tingling spritz on the finish. Just how moreish this makes it is difficult to explain, it just has to be tasted to be believed. Serve this delicately sweet and savoury beauty alongside simply grilled red meat, umami flavours such as mushroom risotto, miso roasted aubergine or noodle broths.
Nabeshima is made by Fukuchiyo Shuzo, a small brewery in Hamamachi, Saga prefecture. They’re surrounded by the Ariake Sea to the east and pan-flat paddy fields in all other directions, stretching out to the mountains on the horizon. It takes its name from the samurai that ruled the Saga clan for many hundreds of years during the Edo period, showing the brewery’s immense respect for ancient traditions. Although the brewery was established in the early-1900s, the young team at the helm now only took over in the late-1990s but have become prolific award winners at the International Wine Challenge with their Nabeshima brand. Out of nowhere in 2011, this sake picked up the Champion Trophy at the IWC rocketing them into the public eye. It’s a must-try for true aficionados.
