Eat The Bits got its name because some people weren’t sure whether they should. Now, in Japan, it would be an affront to add seasoning to your ramen before tasting the stock that the chef has lovingly created, but when a chilli sauce tastes as good as Eat The Bits you can throw the rule book out of the window. And don’t stop at using it to season ramen - you can roast vegetables in it, add it to stir fries, perk up dressing with it, stir it into marinades, create dipping sauces with it, and drizzle it over scrambled eggs, omelettes, pasta, pad thai or fried rice.
