This multi-award-winning English Sparkling Wine is one of the greatest wines this country produces. Made with a traditional Coquard basket press (like those used in Champagne), fermented in Burgundy barrels and aged on the lees for at least three years, this is the kind of wine that puts England firmly on the fine wine map. It’s a gastronomic adventure of nectarine, honey, brioche, bruised red apple, woodsmoke, toasted nuts, roasted peach, poached pear, floral honey, cream and spiced butter.
The Goring family has owned Wiston Estate on the South Downs since 1743, but it was Pip Goring - inspired by the vineyards around Cape Town where she grew up – who pushed for planting a vineyard in 2006. There’s a magic in the wines that Dermot Sugrue produces; when combining that with the Gorings’ passion and heritage, and Wiston Estate’s chalky soils (which are much like those of the Côte de Blancs in Champagne), you have a very serious wine on your hands.
