Deep and boxy Belfast sinks have been in vogue since the 18th Century. In Belfast they became the focal point of the kitchen and the home a great place to have a chinwag flap your gums or mouth off. The Jawbox Spirits Co. Ltd is based on a 300 acre estate just outside Belfast. Here they grown their own grain then triple distil it slowly in copper pot stills with juniper local heather harvested from Black Mountain that towers over the city coriander seeds cassia angelica root orris root cubeb (Java pepper) lemon peel cardamom liquorice and grains of paradise. Citrusy herbaceous and with a sizeable wallop of juniper this Classic London Dry gin makes an exceptional Southside.
