The 36-month aging has given the wine time to evolve and acquire greater complexity, elegance and breadth with full ripe berries of an expressive and vivacious nature. It’s a magnificent expression of Xarel·Lo, displaying inexhaustible effervescence with tiny bubbles, intense white fruit, mixed peel, fennel, baked brioche and a creaminess typical of the long aging process. The vibrant and velvety nature of the bubbles creates a voluptuous mouth filling feeling leading into a long, juicy finish. We adore drinking this at any time but it’s particularly wonderful paired with fragrant mushroom risottos, baked wild sea bass, deeply flavoured Comté or prawn tartar.
