This exceptional fizz is crafted using only the purest free-run juice from organic grapes (55% Xarel·lo, 35% Macabeo and 10% Parellada) and is matured on the lees (the spent yeast that gives quality sparkling wine its nutty, yeasty and bready flavours) for around three years (this is as long as Vintage Champagne requires by law). Golden in colour with a rich nose of ripe greengage, white peach, crisp apple, citrus sorbet, fennel, spices, toast and bakeries. The palate is fresh with a wonderful texture courtesy of the lively and creamy mousse, and an endless finish that's just to die for. The dryness of this Gran Reserva Brut Nature Cava makes it a sensational aperitif, but it’s an equally strong choice for rice-based dishes, tapas and anything that lives in water.
