Dream to Dram was distilled, matured and bottled at the family-owned Kingsbarns Distillery in the Kingdom of Fife. It won Best Lowland Single Malt at the World Whiskies Awards in 2022 and the impressive score from the IWSC above was awarded by a tasting panel that included Richard Paterson OBE (a whisky maker so skilled he once insured his nostrils for £1.6 million with Lloyd’s of London), Dhavall Gandhi (formerly of Macallan and now at The Lakes) and Dr Jim Beveridge OBE (the legendary former Master Blender for Johnnie Walker). So, that’s quite the endorsement.
Dream to Dram is the flagship Single Malt Scotch from Kingsbarns Distillery. It was crafted using locally grown barley and aged in first-fill ex-Bourbon casks from Heaven Hill in Kentucky and STR (shaved, toasted and re-charred) Portuguese red wine casks. It’s love at first sip. There are grassy wildflower meadows, summery red berries, crunchy orchard fruit, vanilla ice cream, gingerbread, banana bread, tinned pineapple syrup and pasteis de nata notes, before a medley of tangy citrus clean the palate on the crisp finish. They call it Dream to Dram; we call it a dream-come-true dram. Especially when it comes in a limited-edition gift box with a pair of matching Glencairn glasses branded with the Kingsbarns logo.
The Wemyss family have a long history with Scotch whisky, as John Haig built his first distillery on their land at the beginning of the 19th Century. Their new venture started out as a derelict Georgian farmstead, which has been lovingly converted into the glamorous Kingsbarns Distillery. This new Lowland whisky producer draws its water from an aquifer 100 metres below the distillery, the Laureate barley is grown in Fife and is completely unpeated (the environmentally conscious choice of many new distilleries), and the wood policy was directed by the late, great Dr Jim Swan, a celebrated whisky maker who was described as “the Einstein of whisky” and who was instrumental in setting up a raft of other great distilleries, including Nc’nean, Filey Bay, Cotswolds, Kavalan, Penderyn, Kilchoman, Victoria Caledonian and Milk & Honey. Kingsbarns Distillery is located deep in golf club country on Scotland’s tempestuous east coast. So, it will come as no surprise that their whisky makes a fine choice after a windy eighteen holes.
