Previously described as “nothing short of remarkable” by critic Matthew Jukes this Sauvignon Blanc made in collaboration with Pascal Jolivet of the Loire Valley fame is on its way to becoming one of South Africa’s future superstars.
Grapes are hand-harvested from carefully selected plots in the highest reaches of Klein Constantia’s vineyards ensuring a crisp acidity. These undergo a slow spontaneous fermentation which allows the aromatics to develop. The wine is then matured on the lees for 12 months in stainless steel tanks and a little oak. The result is restrained complex and oh so classy. Bright and lively lemongrass lime and flint dance amidst a very ‘grown-up’ umami and mineral palate.
