Kokuryu Daiginjo (Crystal Dragon) resounds with deep flavour and unique finesse. Sakes with big taste profiles can sometimes be overbearing and lacking in clarity, but Kokurya is neither of these. It brings together a rich flavour with a delicate balance in a unique expression of the sake-maker's art. It’s made from locally grown 500 Mangoku rice that’s polished to 50% and fermented using a house proprietary yeast. It boasts a powerfully aromatic fragrance of pear drops, roasted walnuts, hazelnuts, roasted apple, lightly cooked chestnut mushrooms, orange blossom florals and a touch of spice with a velvety smooth palate of roasted nuts, and a textural creamy depth. The finish is long leading to a floral, bittersweet nutty end. The clean well-balanced nature of Crystal Dragon makes a spectacular partner to umami rich foods, particularly seafood dishes such as grilled squid, tempura prawns and buttered scallops as well as meat and vegetable dishes with bold flavour.  

Kokuryu is a prestigious sake brewery based in the Fukui Prefecture, west of Nagano, north of Nagoya. It’s arguably the finest and most famous soft water-based brewery in Japan. Soft-water sakes tend to have nuances of flavour not found in the hard-water styles; this could answer why Kokuryu is so distinguished and exceptional. Their sakes tend to only be found in restaurants, so special permission was needed for Harvey Nichols to list the Crystal Dragon.
