More commonly associated with green fairies than big green lake-dwelling monsters but then this is no ordinary Absinthe. Created using a traditional recipe of botanicals that includes aniseed fennel juniper mint and wormwood but where this differs from any other Absinthe is that it’s the first from Scotland and it uses home-grown wormwood. On top of which only 100 bottles were made of the first batch making it super rare.

Absinthe has always been the preferred choice of great artists – think Hemingway Picasso van Gogh Manet Wilde Proust and Poe to name just a few – and we’re sure Robert Burns Robert Louis Stevenson Walter Scott and Arthur Conan Doyle would have partaken in this had it existed earlier. Serve traditionally poured over a sugar cube into three parts of ice cold water or mix it into a Death in the Afternoon a julep or a Martini with gin and dry vermouth.

Lorien and Kevin Cameron-Ross are a husband and wife team whose family has ploughed its furrow in the environs of Loch Ness since 1520. A lot of the ingredients they use come from within 500m of their house including local juniper and wormwood and also the water taken from an aquifer that flows into Loch Ness.
