Aperitif is something pretty rare in the sake world…

It’s an aged sake brewed in 2008 using Miyamanishiki sake rice polished to 40% (i.e. 60% of each grain is carefully whittled away). This style is notoriously hard to brew but this is an excellent example and we can’t get enough of it.

The almost whisky-like liquid has notes of prunes raisins walnut mushrooms cocoa powder leather nutty toffee roasted barley toasted cereal and coffee-laced tiramisu. There’s a subtle sweetness that perfectly balances all that wonderful umami. It reminds us of the oxidised styles of Sherry and like them it can be sipped from the aperitif to the dessert course or cheeseboard. 

Miyamanishiki rice is normally favoured by brewers in the cool northern areas of Japan but this one was made by a 250-year-old brewery in Tajimi a city in Gifu prefecture in the centre of the country. Because it’s so hot and humid here during the summer Michisakari has to brew during the winter months. Established in 1771 they specialise in the kind of crisp light and dry sake that would appeal to white wine drinkers. So Aperitif is not their usual kind of brew making it a rare treat. ‘Michisakari’ means ‘we shall flourish for three thousand years’. So despite already being one of Japan’s most exciting producers they’ve really only just begun!
