Masumi is produced by the Miyasaka Brewing Company in the Nagano Prefecture, roughly located in the middle of Honshu, slightly northwest of Tokyo. Masumi is one of Japan’s greatest breweries, consistently winning national competitions, and producing outstanding sakes that are beautifully presented. They’re renowned for discovering the Yeast Number Seven, which is exclusively used as their proprietary yeast for fermentation, and is said to bring mellow, fruity and savoury flavours to the final liquid. 

Sanka sits in Masumi’s superior flagship line of sakes, combining water, rice, and skill to create something truly special. As fresh as an alpine meadow, this stunning Junmai Daiginjo is made purely from 45% polished Yamadanishiki rice (Japan’s king of rice) and brewed using the proprietary Yeast Number Seven. Exceptionally light, floral and aromatic, this elegant sake reveals honeysuckle, ripe, fresh apricots, a touch of just-roasted walnut and wonderful orange blossom florals that are generous on the nose. The palate is exquisitely smooth, silky and fine textured with a long, seductive length. It’s a wonderful partner to delicate fish dishes, tuna tartare, ceviche, sushi or poached halibut alongside a light beurre blanc.
