Masumi is produced by the Miyasaka Brewing Company in the Nagano Prefecture, roughly located in the middle of Honshu, slightly northwest of Tokyo. Masumi is one of Japan’s greatest breweries, consistently winning national competitions, and producing outstanding sakes that are beautifully presented. They’re renowned for discovering the Yeast Number Seven, which is exclusively used as their proprietary yeast for fermentation, and is said to bring mellow, fruity and savoury flavours to the final liquid.
One of four of Masumi’s flagship sakes, Shiro is considered to be the “session sake” and is light enough to be enjoyed all night. This everyday Junmai Ginjo has a 55% polishing ratio and made from two rice varieties, Miyamanishiki and Yamadanishiki along with Masumi’s proprietary Yeast Number Seven strain. Soft and silky, its full-bodied texture reveals mild aromas of banana and apple that lead into a palate that is gently sweet and brightened by acidity and lingering savoury umami.
