Don’t miss out on the fleeting opportunity to try this rare bottle from Paul Jaboulet Aîné. The name ‘Les Jalets’ comes from an old French word meaning large pebbles. These stones were created by alpine glaciers and carried to the steep slopes of Crozes-Hermitage by rivers around 30 000 years ago. The wine is exceedingly elegant and floral with crisp citrus and crunchy peach notes plus touches of honey gentle spices and roasted almonds on the finish. An exquisite choice for pairing with a Christmas gammon monkfish roasted with pancetta or a good pâté such as mushroom coconut and toasted coriander seed.

Paul Jaboulet Aîné is a Rhône legend producing one of France’s greatest wines the iconic La Chapelle Hermitage. Their story begins with Antoine Jaboulet who founded an estate and cellar in Tain l’Hermitage in 1934. He started with vines on the steep slopes of the famous Hermitage hill and began to expand into neighbouring Crozes-Hermitage. In 2006 the company was acquired by Jean-Jacques Frey who brought substantial investment and a wealth of experience from running estates in Bordeaux (Château La Lagune) Burgundy and Champagne (the family sold Ayala to Bollinger and are part owners of the Harvey Nichols favourite Billecart-Salmon). His daughter Caroline has now taken over and has thoroughly won over the critics. The estate is certified organic and broadly follows biodynamic principles with conversion a work in progress.
