Although allowed to undergo malolactic fermentation – the process that turns turn tart malic acid into creamier lactic acid – this remains a wonderful racy aperitif style redolent with toasted hazelnuts and walnuts acacia blossom chalk crunchy green apple and that yeasty and sesame oil character of tiger bread.
