Circumstance Distillery have released their inaugural Single Grain Estate Whisky which captures the essence of the distillery with its complexity and multi-layered approach. Crafted from four different types of organic grain (malted barley, unmalted barley, malted rye and malted wheat), three different brewing yeasts (saison, Bavarian and mead) and maturation taking place in three different types of casks (ex-bourbon, new European oak and Oloroso sherry conditioned), this whisky is unlike any other but retains the core spirit that Circumstance Distillery is renowned for.  

The nose unveils aromas of baked orchard fruits, zingy lemon zest and rich milk chocolate with the palate developing notes of earthy sweetness, delicate spice, and creamy vanilla leaving a light, fresh and zesty finish. With only 459 bottles released, 20% of which sold out within 10 minutes on the company’s website, we’re sure the ones we’ve been lucky enough to get our hands on will not stay around for long. 

Circumstance Estate Distillery is the second venture from friends Liam Hirt and Danny Walker, following the success of Psychopomp Micro-Distillery and is considered “Britain’s most innovative distillery” by Master of Malt. The five-year-old distillery is known for its “new world style” and their approach to making whisky is to respect the traditions without being confined by them. They specialise in grains, non-traditional yeasts and long fermentations and strive to be as experimental as possible while always living up to their core value of ‘flavour first’ and their green credentials – they’re a certified organic producer and are also certified carbon neutral and a B Corp company. 

The main differentiation from other distilleries lies in the fermentation process where they are keen to push the boundaries in experimentation working with a variety of yeasts, most predominantly beer yeasts, which they feel imparts the best flavours. But you don’t earn a reputation for being the most innovative in the country by simply using different yeasts – the distillery is also experimenting with different types of wood casks such as the Andean oak and even use the flavour of English oak spindles, which have been toasted and charred like a barrel, then dropped into the spirit to impart its spicier characteristics. With other local collaborations up their sleeves, this hugely innovative and exciting distillery is definitely one to watch.
